Summer salads

This weekend is going to be HOT here. At first they were saying it'd be 110 tomorrow, but have (thankfully) cooled that down to 106. That isn't a lot to be thankful for, since after 105 it all feels the same to me - uncomfortable!

So, this is going to be a salad eating weekend - pasta salad mostly. However, tomorrow night we have our ward (indoor) luau (with a pig even)! We have been asked to bring Hawaiian type food, so I'm making another salad (frog eye/acini de pepe) for that! The best part about all these salads - I make them in the morning, and then there is nothing I have to cook for dinner. THAT is what I am grateful for, besides the yummy salads! :)
