for the 4th of July i made pulled pork. i didn't want to bbq since it was going to be rather hot out, and who wants to add more heat when you already have enough?
the recipe i used was pretty simple: pork roast, salt, pepper and liquid smoke. put it in the crockpot for 16 hours and voila - you've got some pretty tender and tasty meat!
i had purchased some pork strips awhile ago, and i knew they were lurking in my freezer, just waiting to be used. now, mind you, i couldn't tell you what pork strips are exactly, but i figured they would be tasty, and i was not the least bit disappointed.
i happen to love pulled pork with rice. i don't know why, it just works. so i slipped these pork strips into the crockpot, added salt, pepper and some liquid smoke. then i turned the crock pot on high for 1/2 hour. after that i turned it to low for 5 hours.
when i returned home from church i put rice in the our rice cooker and cooked some fresh green beans.
within 40 minutes we were sitting down to a delicious meal. i am so grateful for delicious Sunday dinners! (and easy ones too!) =)
